Ingredients:
1lb
green or yellow
split peas
2 1/2 litres of boiling
water
1/4 lb of lean salt pork
(uncut)
1 large diced carrot
5 sliced spring onions
1 large stalk of celery
including leaves diced
2 teaspoons of salt
1/4 teaspoon of pepper
To prepare, place
peas
in boiling water in a large
pan and simmer. Add salt pork and simmer for approximately 1 - 1 1/2
hours.
Then add remaining ingredients and cover.
Continue to simmer for
another 1 - 1 1/2 hours
until the soup is quite thick, stirring occasionally. Add salt to taste
as required.
