Ingredients:

THE MIXTURE
100 grams margarine or butter
300 grams caster sugar
2 eggs
400 grams self raising flour
225 grams dates
1 teaspoon bicarbonate of soda
1/2 litre of boiling water
THE SAUCE
200 grams of butter
400 grams of brown sugar
500 ml double cream

Cream the butter and sugar until white and fluffy. Beat in eggs gradually and then fold in the flour. In a separate bowl, pour boiling water over the dates and bicarbonate of soda. When the water has been absorbed, add the dates to the creamed mixture. Bake in a hot oven for approximately 40 minutes at 160 degrees C (gas mark 2) or until firm to the touch.

To make the sauce, melt all the ingredients together in a heavy-based pan,  bring to the boil and boil for 2 minutes.
Pour the sauce over the baked pudding and brow under the grill before serving.
Serves 4 to 6 people.
